Le Sciare Novecento comes from a selection of Etna Nocellara variety olives harvested in the volcanic soil of Etna and at an altitude of at least 900 meters above sea level in the month of October each year. Le Sciare Novecento is produced in a limited series of maximum 2000 bottles a year

CHARACTERISTICS

Variety of olives used : nocellara etnea;

Production area : Slopes of Etna;

Altitude of the olive groves : from 900 meters above sea level;

Free acidity % of oleic acid : from 0.10 to 0.40;

Harvesting method : by hand with the aid of combs, facilitating machines and collection nets;

State of ripeness at harvest : at veraison;

Extraction system : continuous integral within 8 hours of harvesting.

TASTING NOTES

Appearance : Veiled opalescent with intense green hues;

Scents : medium fruity with a sensation of freshly mown grass;

Taste : bitter and spicy with tomato aftertaste
