Le Sciare is made from a selection of Nocellara dell'Etna, Tonda Iblea, and Biancolilla olives in varying percentages from year to year, harvested from volcanic soils on Mount Etna

CHARACTERISTICS
Variety of olives used : nocellara etnea, tonda iblea and biancolilla;
Production area : Slopes of Etna, Simeto Valley;
Altitude of the olive groves : 500-800 meters above sea level;
Free acidity % of oleic acid : from 0.10 to 0.40;
Collection method : by hand with the aid of combs, facilitating machines and collection nets;
State of ripeness at harvest : at veraison;
Extraction system : continuous integral within 8 hours of harvesting.
TASTING NOTES
Appearance : Veiled opalescent with intense green hues;
On the nose : medium fruity with a sensation of freshly mown grass;
Taste : bitter and spicy with tomato aftertaste
Pairings : it is appreciated raw and for seasoning legumes and roasts

Le Sciare Novecento is born from a selection of Nocellara dell’Etna olives harvested in volcanic soils of Mount Etna at an altitude of at least 900 meters above sea level in October of each year. Le Sciare Novecento is produced in a limited series of maximum 2000 bottles per year
